These are not the easiest to eat, but these Keto friendly sandwiches are really good! The cucumber acting as bread is a great alternative. Swiss and turkey is a classic deli sandwich combination that's delicious with the zingy mayo/mustard mixture. The whole little sandwich makes you forget about watching carbs. We found slicing the cucumber into smaller pieces (like sushi) the easiest way to eat these.

Ingredients For keto friendly low carb cucumber sandwiches

  • 3 lg
    cucumbers, peeled
  • 6 slice
    deli turkey meat
  • 6 slice
    Swiss cheese
  • 1 lg
    tomato
  • 2 Tbsp
    mayonnaise
  • 1 Tbsp
    Dijon mustard

How To Make keto friendly low carb cucumber sandwiches

  • Scraping seeds out of a cucumber.

    Cut the peeled cucumbers in half. Then cut each half in half again lengthwise. With a spoon scrape out the seeds.
  • Mayo and mustard mixed together.

    Mix the mayonnaise and mustard together.
  • Slicing the tomatoes on a cutting board.

    Cut the tomato in half and slice each half into 6 slices (so you have a total of 12 slices).
  • Mayo/mustard mixture spread on the cucumber.

    Take one cucumber and add the spread with mustard mixture.
  • Topped with turkey and cheese.

    Top with one slice of turkey, cheese, and 2 slices tomato.
  • Top half of cucumber placed on the sandwich.

    Spread more mustard mixture on another cucumber and place on top. Continue until all ingredients are used. You will have 6 sandwiches.
