This recipe if from a friend of ours in Oregon. This recipe was always a favorite at potlucks. He always told us that there was a "secret ingredient" and we would beg him to tell us. Years ago, shortly before he passed away he finally divulged the secret. It is the mint! Rest in peace Ken Smith. Your recipe remains the favorite of many!

Ingredients For kentooee salad

  • 1/2 c
    pearl barley
  • 1/2 c
    minced parsley
  • 1/4 c
    minced green onions with tops
  • 2 Tbsp
    minced green olives
  • 1
    tomato chopped
  • 1 tsp
    dried mint (he dried his own garden mint)
  • 1/4 c
    oil ( he used 1/8 cup of olive and 1/8 cup of vegetable)
  • 1 Tbsp
    lemon juice
  • 1/2 tsp
    white wine vinegar
  • 2 tsp
    salt (divided...1 teas for the boiling water, 1 teas for the salad)
  • 1/2 tsp
    ground black pepper

How To Make kentooee salad

  • 1
    Bring at least 1 cup of water, the pearl barley and about a teaspoon of salt to a boil. Turn heat down and simmer the barley for about an hour.

    Remove from heat and put cooked barley in colander over sink. Rinse with cold water and drain thoroughly.

    Beat together the oil, vinegar and lemon juice to emulsify with a whisk.

    Toss all ingredients together in a bowl and chill in the refrigerator for a few hours..if you can wait! Makes approx 1 quart of salad Recipe from Ken Smith
