kathy’s poppyseed dressing & perfect paired salad

One of my favorite family recipes comes from my Texas sister, Kathy. She shared this dressing recipe in 2016, then explained that she adds whatever fruit she has on hand to mixed greens with grilled chicken slices salad to get her sweet husband, Greg, to eat fruit. It makes a lovely potluck salad, too. Just add the poppyseed dressing right before serving. It will be a family favorite for you, too. =^..^=

Ingredients For kathy’s poppyseed dressing & perfect paired salad

  • KATHY’S POPPYSEED DRESSING
  • 1/3 c
    apple cider vinegar
  • 2/3 c
    vegetable or canola oil
  • 2 Tbsp
    water
  • salt and pepper, to taste
  • 1 tsp
    yellow mustard (or a squirt)
  • 1-2 Tbsp
    white sugar or to taste
  • 1-2 tsp
    poppy seeds
  • GREG’S FAVORITE SALAD WITH FRUIT
  • mixed salad greens
  • grilled or cooked chicken slices
  • onions, cut in rings
  • grape tomatoes, cut in half
  • croutons
  • walnut or pecan pieces
  • cut up fruit (like peaches, pears, apples, strawberries)
  • tender crisp asparagus, optional***

How To Make kathy’s poppyseed dressing & perfect paired salad

  • Poppyseed Dressing
    1
    For the poppy seed dressing, combine all ingredients in a jar or container with a lid. Shake well. Taste and adjust, as desired. Refrigerate until needed.
  • Poppyseed Dressing with Tossed Salad with Chicken Slices & Fruit

    For the salad, layer vegetables and fruit in a bowl. Refrigerate until serving. Add dressing right before serving and toss gently.

    ***To prepare the asparagus, clean in cold water and trim the bottoms of the asparagus spears. Cut the asparagus spears in half. Put in a microwave-safe bowl with 2-3 Tablespoons of water. Cover and microwave for about 7 minutes until “tender crisp.” Drain hot water. Chill asparagus in cold water with ice cubes for a couple of minutes. Drain and dry before adding to the salad.
