jewel couscous/or quinoa salad
One of my friends made a similar salad for a potluck and it was delicious! I've made a few changes and ended up with this.

Ingredients For jewel couscous/or quinoa salad

1 1/4 ccouscous or quinoa

1 1/4 chot vegetable stock

1/2 lbcherry tomatoes

1/2cucumber
-
2 Tbspolive oil

1 lglemon zest and juice
-
1 smred onion, thinly sliced

1 1/4 cfeta cheese
-
1 bunchbasil chopped (may use mint instead for different flavor)
How To Make jewel couscous/or quinoa salad

1Place couscous in a large bowl and pour over the hot stock. Leave for 5 minutes until liquid has been absorbed. Allow to cool completely.

2cut cherry tomatoes in half. Half the cucumber lengthwise and scoop out seeds with spoon, then cut into pieces.

3Stir the lemon juice, zest, olive oil together. Add tomatoes, cucumbers, basil, to couscous mixture. Salt and pepper to taste.
