This side dish is so lite and refreshing and is only 46 calories!! This goes well with my other recipe Ginger Pork Wraps.

Ingredients For japanese cucumber salad

  • 2 md
    cucumbers
  • 1/4 c
    rice vinegar
  • 1 tsp
    sugar
  • 1/4 tsp
    salt
  • 2 Tbsp
    sesame seeds, toasted

How To Make japanese cucumber salad

    Peel cucumbers to leave alternating green stripes.Slice the cucumbers in half lengthwise;scrape the seeds out with a spoon.

    Using a knife, cut into very thin slices. While you are doing this you can toast your sesame seeds in a dry nonstick pan, stirring frequently until fragrant and golden. Set aside to cool.

    Combine sugar, salt, rice vinegar in medium bowl stirring to dissolve.

    Add cucumbers and sesame seeds to your rice vinegar mixture;tossing to coat. Serve immediately
