Ingredients For israeli salad

  • VINAIGRETTE
  • 2 Tbsp
    extra virgin olive oil
  • 1 Tbsp
    freshly squeezed lemon juice
  • 1 tsp
    dried mint, crushed
  • 1 tsp
    italian seasoning
  • 1/4 tsp
    ground himalayan sea salt, or to taste
  • 1/4 tsp
    freshly ground black pepper, or to taste
  • 1/4 tsp
    honey
  • SALAD
  • 2 1/2 c
    (1 large) english cucumber, washed and quartered
  • 1 c
    cherry tomatoes, washed and halved
  • 1/2 c
    red onions, sliced (lyonnaise cut) and halved
  • 1/2 c
    red peppers, finely diced
  • 1/2 c
    orange peppers, finely diced
  • 2 Tbsp
    parsley, chopped
  • 1 1/2 c
    feta cheese (about 7 oz.), diced

How To Make israeli salad

    In a small bowl, combine all the vinaigrette ingredients; whisk until blended and set aside.

    In a large bowl, combine cucumber, tomatoes, red onions, peppers and parsley; toss well.

    Pour vinaigrette over the vegetables and toss again. Add feta cheese and gently mix until well incorporated.
