Imitation crab - some like it, some don't. Personally, I really like it. This is one of my favorite ways to use it. It's a very flavorful combination of imitation crabmeat, mayo, old bay, dill and capers. It's sweet, tangy and creamy with a pop of caper saltiness and a touch of dill. If you're concerned about salt, leave the seasoned salt out of the mix. This salad is delicious on it's own or on a hoagie roll, and in a tortilla or lettuce wrap. Or... just give me a fork and the whole bowl, LOL!

Ingredients For imitation crab salad

scant 1/2 cmayonnaise

1/4 tspold bay seasoning

scant 1/8 tsplawry's seasoned salt

1 tspfresh minced dill weed

1 tspminced shallot
-
1/2 Tbspfinely grated carrot (1 baby carrot)

1/2 Tbspdill pickle, small dice
-
1/4 ccelery, small dice
-
8 ozimitation crabmeat (surimi)

1 tspdrained capers
How To Make imitation crab salad

1Gather and prep all ingredients.

2In a medium size bowl, mix together well, mayonnaise (I recommend Duke's brand,) Old Bay seasoning, Lawry's seasoned salt, dill weed, minced shallot and grated carrot.

3Add diced dill pickle and celery; mix well.

4Chop imitation crabmeat into small bite-size pieces (or shred if you prefer.)

5Add crabmeat to ingredients in bowl; mix well to combine.

6Add capers and gently fold into mixture. Cover and refrigerate until served.
