In looking for authentic NY Deli coleslaw, I found a lot of controversy as to whether mayo is or is not acceptable. This one comes from the Pro-Mayo group! (Based on Mitch Weinstein's Honest Cooking blog.)

Ingredients For honest coleslaw

1 bagred and green cabbage mix, with carrots

1 Tbspkosher salt

1/4 cmayonnaise

1/8 cvinegar (rice wine, white wine - use a good vinegar)

1 Tbspsugar

1/4 tspcelery seed

1/4 tspfreshly ground black pepper

1 Tbspchopped parsley
How To Make honest coleslaw

1Toss cabbage mixture with salt in a colander. Cover the colander with a plate and put a heavy can on top. Let it sit for a good 3 - 4 hours, then squeeze dry.

2Squeeze cabbage dry with a clean towel, toss with dressing.
