My mom made this every New Years. It is a traditional dish in her part of Germany (near the North Sea) as well as in my dad's region (near the Rhine River). It may be a custom all over Germany, idk. Scandinavian people share a love for this dish at New Years, too. It looks pretty and pink, but don't be fooled - it's not sweet! (I brought some to work for lunch once and a co-worker thought it was some fruit fluff. She was totally grossed out when she found out what it was!!)

Ingredients For herring salat (beet salad with herring)

  • 3 can
    sliced beets, drained and chopped (15 oz cans)
  • 1 md
    apple, peeled, cored and chopped
  • 2 md
    red potatoes, boiled, peeled, diced
  • 2 lg
    dill pickles, finely chopped
  • 3-4 oz
    pickled herring, finely chopped (either creamy or in wine is fine)
  • 4 oz
    cooked chicken, finely chopped (left over beef can be used instead)
  • 1 Tbsp
    capers
  • 1/2 c
    lite mayonnaise
  • 1-2 Tbsp
    stone ground mustard
  • 1
    hard boiled egg (for decoration)

How To Make herring salat (beet salad with herring)

    The trick to this is to get everything chopped to be relatively uniform in size. Then just mix everything together. Chill before serving.

    To be extra fancy, make a design with the minced egg white and crumbled egg yolks on top of the salad.
