This is my own original version of a healthy veggie salad I created. I made this for a family gathering and everyone enjoyed it and gave out the recipe to several family members. I hope everyone enjoys this as much as we do.

Ingredients For healthy veggie slaw

  • 2 heads
    brocoli finely chopped
  • 5
    baby carrots, shredded
  • 1/4 cup
    finely chopped purple onion
  • 3/4 cup
    cheddar cheese, shredded
  • 3 Tbsp
    bacon bits
  • 1/8 cup
    sunflower seeds
  • 1/4 cup
    craisins
  • DRESSING:
  • 1/4 cup
    mayonnaise, light
  • 1/2 Tbsp
    sugar
  • 2 Tbsp
    apple cider vinegar
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper

How To Make healthy veggie slaw

  • 1
    Mix the first seven ingredients together. Mix up the dressing ingredients in a small bowl. Add to the salad. Mix gently. Refrigerate. This is better made a day in advance to allow the dressing to marinate the veggies.
