Light and fresh, this grilled peach salad is perfect for summer. The tangy and creamy flavor of the blue cheese is a wonderful complement to the sweet and smoky grilled peaches. Roasted pistachios add a nice crunch. What brings the salad together is the homemade raspberry vinaigrette. It is slightly tart and adds a refreshing burst of fruity flavor. To make this a dinner salad, add grilled chicken breasts or tenderloins.
