Ingredients For greek rice salad

  • 1 1/2 c
    uncooked rice
  • 2 c
    water
  • 2 Tbsp
    white vinegar
  • 3 1/2 Tbsp
    olive oil
  • 1 tsp
    oregano, fresh or 1/2 tsp dried
  • 1/4 c
    parsley finely chopped
  • 1 clove
    garlic minced
  • salt and pepper to taste
  • 10-12
    green and black olives pitted and chopped
  • 1
    head bib lettuce or 12 spinach leafs
  • 1/2 c
    feta cheese
  • optional: 1/2 cup cherry tomatos halved or quartered

How To Make greek rice salad

  • 1
    Mix water, vinegar, oil, oregano, parsley, garlic, and salt and pepper in a jar cover and shake well.

    Combine the cooked rice and chopped olives tomatos in a large bowl.

    pour the dressing over rice.
  • 4
    Arrange leaves of the lettuce or spinache on plates, fill with rice mixture, top with feta.
