Ingredients For gazpacho salad

  • DRESSING
  • 3/4 c
    balsamic vinegar
  • 1 Tbsp
    sugar
  • SALAD
  • 5 c
    seedless watermelon balls
  • 12
    cherry tomatoes halved
  • 2 Tbsp
    crumbled tomato basil feta cheese
  • 11
    mint leaves torn
  • sea salt

How To Make gazpacho salad

  • 1
    To make the dressing, add the balsamic vinegar and sugar to a small saucepan. Bring to a boil and reduce to a simmer. Simmer until thick and syrupy, about 10 minutes.

    To make the salad, divide all ingredients between 4 bowls. Sprinkle with sea salt and drizzle the balsamic dressing over top.
