I fell in love with this at a potluck where someone brought it. I searched down the owner and got the recipe. Love the crunch the fritos add.

Ingredients For frito salad

  • 1 lg
    green pepper, diced small
  • 1 lg
    red pepper, diced small
  • 2 c
    hellman's mayonaise, chilled
  • 4 can
    sweet corn, drained
  • 1 md
    red onion, diced small
  • 1 bag
    chili cheese fritos 9 oz
  • 2 c
    finely shredded cheddar cheese
  • 1/2 sm
    jalapeno peppers, seeded. chopped very fine. this is optional to add a little kick.

How To Make frito salad

  • 1
    Everything in the recipe should be chilled ahead of time. Mix everything together gently. Do not add fritos. Chill for 1-2 hours. 5 minutes before serving fold in bag of fritos gently. Serve.
