This recipe was served at our church during our Parade of Tables fundraiser. It was the hit of the luncheon. I got this from our former Minister of Music and my family really loves it. So simple and soooo good.

Ingredients For frito corn salad

  • 15 oz can
    yellow corn ( drained)
  • 15oz can
    either fiesta or mexican corn ( drained)
  • 1/2 c
    diced red pepper
  • 1 bunch
    diced spring onions
  • 1 c
    mayonnaise
  • 1 c
    sour cream
  • salt & pepper to taste
  • 1 pkg
    bbq fritos corn chips

How To Make frito corn salad

  • 1
    Mix all ingredients together EXCEPT corn chips. Add corn chips to mixture and save a few to garnish the top just before serving. Enjoy!
