When we order chinese take out, we always end up with tons of leftover steamed white rice. This is a great way to use it up! Chill time is not included in the prep time.

Ingredients For fried rice salad

1 Tbspplus 1 teaspoon vegetable oil

1 ccelery, thinly sliced

1 conion, minced

1 smgreen bell pepper, cut into julienne strips

1/2 tspsugar

1/2 tspsalt

1/4 - 1/2 tsppepper

4 ccooked long grain rice

1 Tbspsoy sauce
-
1 mdtomato, diced
-
1 Tbspfresh parsley, minced

3 Tbspgreen onion tops, chopped
How To Make fried rice salad

1Heat oil in a large skillet or wok over medium-high heat; add celery and the next 5 ingredients, and stir-fry for 3 minutes.

2Add the rice, and stir fry for 2 minutes. Remove from the heat and stir in the soy sauce.

3Spoon the rice mixture into a serving bowl; cover and chill at least 3 hours. Top with tomato, parsley, and green onions just before serving.
