A nice alternative to a lettuce salad and a healthy one also. I have made this using other vegetables I have on hand.

Ingredients For forget the lettuce salad

1 cchopped tomatoes, with their juices

1 cchopped cucumber, peeled and seeded

1 cchopped bell pepper, green, yellow and red
-
1 cchickpeas
-
1 cblack olives
-
1/2 cchopped green onions
-
2 Tbspchopped fresh mint
-
2 Tbspchopped fresh parsley
-
2 Tbspchopped fresh basil
-
1/2 cfeta cheese
-
1 tspminced garlic
-
1/2 colive oil, extra virgin

1/4 clemon juice
-
salt and pepper to taste
How To Make forget the lettuce salad

1In a large bowl, combine tomatoes, cucumber, peppers,chickpeas, olives and green onions, mint, parsley, and basil. Season with salt and pepper and toss to combine.

2In a separate bowl, whisk together garlic, lemon juice and olive oil. Add feta cheese to salad.

3Pour dressing over salad and toss. You may not need all of the dressing.

4Makes 10 to 12 servings.
