A nice alternative to a lettuce salad and a healthy one also. I have made this using other vegetables I have on hand.

Ingredients For forget the lettuce salad

  • 1 c
    chopped tomatoes, with their juices
  • 1 c
    chopped cucumber, peeled and seeded
  • 1 c
    chopped bell pepper, green, yellow and red
  • 1 c
    chickpeas
  • 1 c
    black olives
  • 1/2 c
    chopped green onions
  • 2 Tbsp
    chopped fresh mint
  • 2 Tbsp
    chopped fresh parsley
  • 2 Tbsp
    chopped fresh basil
  • 1/2 c
    feta cheese
  • 1 tsp
    minced garlic
  • 1/2 c
    olive oil, extra virgin
  • 1/4 c
    lemon juice
  • salt and pepper to taste

How To Make forget the lettuce salad

  • 1
    In a large bowl, combine tomatoes, cucumber, peppers,chickpeas, olives and green onions, mint, parsley, and basil. Season with salt and pepper and toss to combine.

    In a separate bowl, whisk together garlic, lemon juice and olive oil. Add feta cheese to salad.

    Pour dressing over salad and toss. You may not need all of the dressing.

    Makes 10 to 12 servings.
