feta tomato and cucumber salad

This quick and easy salad is protein rich from the feta. We use pickled garlic liberally in our house, it's got a surprisingly mild flavor with none of the bitterness of raw garlic. English cucumbers are much smaller than regular ones and have a sweeter flavor and less seeds. Romas are firmer and also have less seeds than their standard brethen. Both of these keep the salad from geting watery. If you have time after making, chill in the refrigerator.

    roma tomatoes (cut into wedges)
  • 4
    english cucumbers (thinly sliced)
  • 10
    pickled garlic (thinly sliced)
  • 1/2 c
    fresh basil (cut into strips)
  • 6 Tbsp
    olive oil
  • 4 Tbsp
    balsamic vinegar
  • 6 oz
    feta cheese (crumbled)
