Many times I watched my mother make her wonderful deviled eggs and I memorized the ingredients, if not the exact measurements. These measurements are a close estimate, but you may adjust to suit your own taste.

How To Make ellen's mother's deviled eggs
-
1Place 8 eggs in large pan. Fill with enough water to cover eggs. Bring to a boil over medium to high heat. When they start to boil, reduce heat and simmer for 15 minutes, uncovered.
-
2Rinse eggs under cold water until cool enough to handle. Peel and cut in half lengthwise.
-
3Carefully scoop out yolks and place into a medium bowl. Gradually add remaining ingredients to yolks (except paprika), stirring frequently and don't forget to taste-test until flavor is to your liking. Add ingredients slowly--you can always add more but you can't subtract once it's been added.
-
4When filling is ready, spoon into empty egg white halves. Score with the back of a fork and sprinkle with a light dusting of paprika.
