egg salad (mayo-free)

This is a low-carb or keto recipe-we serve it on low-carb bread. My husband doesn't care for mayo, so I made it this way, and we both love it. You can also add either chopped green onions, pickle relish, or anything else you'd like. I think it would be good with chopped pickled jalapeno peppers.

Ingredients For egg salad (mayo-free)

  • 5 lg
    eggs, boiled and peeled
  • 4 oz
    softened cream cheese
  • 3 Tbsp
    whole grain mustard
  • 2 Tbsp
    sour cream
  • 2 Tbsp
    softened butter
  • 1/4 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1/4 tsp
    seasoned salt
  • 1/4 tsp
    celery seed
  • 1/8 tsp
    onion powder

How To Make egg salad (mayo-free)

    In a medium bowl, using a pastry cutter or fork, smash the eggs.

    Add the remaining ingredients, mixing well.
