easy veggie salad

This Veggie Salad was served at a catered luncheon for a class workshop. I was curious to find out if anyone knew what was in the salad since it was so different and delicious. The surprise was our coordinator provided the veggie salad as a covered dish and not the catering service..... she was so kind to share this recipe with me. It is a SIMPLE, EASY and super MAKE-AHEAD dish.....

Ingredients For easy veggie salad

  • 1 can
    cut green beans
  • 1 can
    lesueur peas
  • 1 can
    lesueur white shoepeg corn
  • 2 c
    chopped celery
  • 1 sm
    jar pimiento, chopped
  • 1 c
    chopped onions (optional: 2 cups)
  • drain all cans
  • MARINADE:
  • 1 c
    sugar
  • 1-1/2 tsp
    salt
  • 1 c
    vinegar
  • 1/2 c
    oil
  • 1 tsp
    paprika

    Mix all together; marinade at least a day before serving.
