This is my version of a coleslaw, I had on a trip to St. Kitts in the West Indies. I had the most amazing coleslaw there. I absolutely fell in love with it. What makes this coleslaw different? The addition of pineapple , pineapple juice, coconut, and raisins. It gives it A little something extra. My recipe is not like any other on the Internet. My version tastes extremely close to the one had in St. Kitts. I hope you all enjoy it!

Ingredients For easy caribbean island coleslaw

  • 12 oz
    bag of coleslaw mix
  • 3/4 c
    mayonaise such as hellmans
  • 1/3-1/2 c
    unsweetened pineapple tidbits cut in to tiny pieces, or fresh pineapple.
  • 1/4 c
    pineapple juice from above pineaple tidbits
  • NOTE: IF YOU CAN'T FIND CANNED PINEAPPLE TID BITS. CUT CHUNK PINEAPPLE IN TO SMALLER PIECES
  • 1/4 c
    sweetened coconut
  • 1/4 c
    golden raisins or regular raisins
  • 1/4 c
    finely chopped red bell pepper
  • salt and pepper to taste
  • 1/8 tsp
    celery seed

How To Make easy caribbean island coleslaw

    Mix all ingredients together well in a bowl. Refrigerate for at least 4-8 hours. The longer it sits in the refrigerator. The better it will be. It would be great to make this and let it sit overnight before serving the next day.
