Now's the time to take advantage of the great supply of cucumbers and watermelon this time of year, the "dog days" of August! This salad is cool and refreshing - even your kids will love it - but it's best eaten the same day.

Blue Ribbon Recipe

A cool and refreshing salad with a Mediterranean flair for summer. The dressing is very tangy which is a wonderful contrast to the sweet watermelon. We loved the addition of diced cucumber too. But our favorite part was the broken-up pieces of Feta cheese throughout. All the flavors meld together to create a refreshing summer salad.

Ingredients For dog days watermelon salad

  • 4 c
    watermelon, cubed (seedless is easiest)
  • 1 lg
    cucumber, seeded and diced
  • 1/2
    red onion, minced
  • 1/4 c
    crumbled Feta cheese

    pitted Kalamata olives, quartered (optional)
  • FOR THE DRESSING:
  • 1 tsp
    lemon juice
  • 2 tsp
    lime juice
  • 1
    lemon, zested (optional)
  • 1
    lime, zested (optional)
  • 1/2 c
    chopped fresh parsley
  • 1/3 c
    fat-free Greek or regular yogurt
  • 1/4 tsp
    black pepper

How To Make dog days watermelon salad

  • Dressing ingredients in a bowl.

    Mix dressing ingredients in a small bowl and refrigerate.
  • Salad ingredients in a bowl.

    Toss all other ingredients together except dressing.
  • Salad ingredients and dressing combined.

    Keep chilled until ready to serve. Then gently fold in the dressing.
