Now's the time to take advantage of the great supply of cucumbers and watermelon this time of year, the "dog days" of August! This salad is cool and refreshing - even your kids will love it - but it's best eaten the same day.

A cool and refreshing salad with a Mediterranean flair for summer. The dressing is very tangy which is a wonderful contrast to the sweet watermelon. We loved the addition of diced cucumber too. But our favorite part was the broken-up pieces of Feta cheese throughout. All the flavors meld together to create a refreshing summer salad.

Ingredients For dog days watermelon salad

4 cwatermelon, cubed (seedless is easiest)

1 lgcucumber, seeded and diced

1/2red onion, minced

1/4 ccrumbled Feta cheese

8pitted Kalamata olives, quartered (optional)
- FOR THE DRESSING:

1 tsplemon juice

2 tsplime juice

1lemon, zested (optional)

1lime, zested (optional)

1/2 cchopped fresh parsley

1/3 cfat-free Greek or regular yogurt

1/4 tspblack pepper
How To Make dog days watermelon salad

1Mix dressing ingredients in a small bowl and refrigerate.

2Toss all other ingredients together except dressing.

3Keep chilled until ready to serve. Then gently fold in the dressing.
