This salad is just waiting for someone to eat I can hear it say EAT ME EAT ME. My mom made this salad and what a treat.

Ingredients For cucumber radish salad

3cucumbers cut into1/2 inch pieces

3garlic cloves lightly crushed

1 smdried red chili crushed

1/2 tspsugar

kosher salt
-
2 Tbspfresh lime juice

1/4 colive oil, extra virgin

4radishes thinly sliced
-
1 cmixed herbs, such as cilantro, parsley, basil tarragon chives
-
freshly ground pepper
-
1-( 8 ) ozpiece of burrato or fresh mozzerella quarted
How To Make cucumber radish salad

1In a large resealable plastic bag, combine the cucumbers, garlic, chili, sugar, 1/2 teaspoon of salt and 1 tablespoon of the lime juice. Seal and shake the bag squeezing slightly to mash the cucumber and release the juices . Let stand at room temperature for 30 minutes

2Drain the cucumbers, reserving 2 tablespoons of the cucumber juice discard the garlic and chili In a medium bowl, whisk the cucumber juice with the remaining 1 tablespoon of lime juice and 2 tablespoons olive oil

3Add the cucumbers, sliced radishes, and the herbs and season the salad with salt and pepper

4Arrange the salad on plates. Place a piece of burrata or mozzarella alongside each serving, drizzle with the remaining 2 tablespoons of olive oil and serve.
