My mom used to pick every vegetable out of our garden that she used in this salad. It is very refreshing on a hot summer day.

Ingredients For cucumber garden salad

  • 6 lg
    sliced cucumbers
  • 4 lg
    tomatos - seeded
  • 1 lg
    red onion
  • 2/3 c
    white or red wine vinegar
  • 1 c
    water
  • 1 1/2 tsp
    salt
  • 1 tsp
    pepper

How To Make cucumber garden salad

    Peel (optional) cucumbers and slice about 1/4 inch thick. Cut and seed tomatos. Peel and slice red onion.

    Put all vegetables into a bowl, pour vinegar and water over the vegetables. Water is approximate - you need enough to ensure all vegetables are covered. I use enough vinegar to ensure a very tart flavor - again amounts are approximate.

    Add salt and pepper. Cover and refrigerate for several hours before serving - allows flavors to develop well.
