Ingredients For couscous salad

3/4 ccouscous, uncooked

2 ccanned garbanzo beans

2 mdtomatoes, seeded and chopped
-
1 cpeeled, seeded, and chopped cucumber

1 cchopped fresh parsley
-
1/2 cfinely chopped green onions
-
3/4 colive oil
-
1/2 clemon juice
-
2 clovegarlic, minced
-
1 tspsalt
-
1 tspground coriander
-
1 tspdijon mustard
-
freshly ground pepper to taste
How To Make couscous salad

1Cook the couscous according to the package directions. Let it cool.

2Combine the couscous, garbanzo beans, and the next 4 ingredients in a large bowl. Toss gently.

3Combine the olive oil, lemon juice, garlic, salt, coriander, mustard, and pepper to taste in a jar; cover tightly and shake vigorously.

4Pour the dressing over the couscous mixture; toss gently. Serve immediately.
