Ingredients For country garden salad

3 Tbsplemon juice

2 Tbspextra virgin olive or canola oil

3/4 tspsalt

1/4 tspblack pepper

1 lgseedless or seeded cucumber

1 ptgrape or other very small tomatoes, cut into halves

3/4 cthinly sliced scallions

1/2 cchopped fresh parsely (or less if using dried parsley)

1 Tbspchopped fresh mint (optional)
How To Make country garden salad

1Whisk together the wet ingredients, until well blended.

2Add remaining ingredients. Toss well. This can be chilled for a few hours before serving, or served immediately.
