Since the weather is becoming warmer and we're not in the mood for cooking so much, I thought you may appreciate another version of Corn Salad which requires no cooking. (This version is also quite refreshing to eat too.)

Ingredients For corn salad (kay112 version 2)

    (15 1/4 oz.) cans of shoepeg corn, drained
  • 1 lg
    tomato, chopped
  • 4
    to 5 green onions, chopped
  • 1 md
    green bell pepper, seeded and chopped
  • 2
    stalks celery, chopped
  • 1/2 c
    mayonnaise
  • 1/8 tsp
    ground black pepper, to taste

How To Make corn salad (kay112 version 2)

    In large bowl, combine all ingredients. May add more mayonnaise, to taste. Cover and chill at least an hour.
