2 ccooked corn, fresh or frozen

1avocado, cut into 1/2 inch cubes

1 ptcherry tomatoes, halved

1/2 cred onion, finely diced

dressing:

2 Tbspolive oil

1/2 tspgrated lime zest

1 Tbspfresh lime juice

1/4 tspcilantro chopped

1/4 tspsalt

1/4 tsppepper

optional: can add 1/4 cup shredded cheese

optional: can add cooked diced chicken
How To Make corn, avocado, and tomato salad

1Combine the corn...make sure the corn is not overcooked. Add tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in another bowl, pour over the salad and gently toss to mix.
