    zucchini, diced ( about 2 cups )

    chopped mint
  • 2 Tbsp
    olive oil, extra virgin
  • 2 Tbsp
    lemon juice, fresh
  • 1 tsp
    honey
  • 1/2 tsp
    kosher salt
  • coarsley ground pepper to taste
