Grilled corn gives it a much better flavor, but you can use canned corn to save time.

Ingredients For corn and black bean salad

  • 2 c
    Corn, roasted on grill (4 ears) and cut off cob
  • 1 lg
    Red Pepper, chopped
  • 1/2 c
    green onions, sliced thin
  • 1/2 c
    Fresh Cilantro, chopped
  • 1 can
    black beans, rinsed and drained
  • 1/4 c
    red wine vinegar
  • 1 tsp
    Sugar
  • 2 tsp
    canola oil
  • 2 clove
    Garlic, chopped
  • 1/2 tsp
    Ground Cumin
  • 1/2 tsp
    chili powder
  • 1/2 tsp
    black pepper

How To Make corn and black bean salad

  • 1
    Combine corn, red pepper, onions, cilantro and beans in bowl.
  • 2
    Combine vinegar and remaining ingredients in small bowl.
  • 3
    Drizzle vinegar mixture over corn mixture and stir to mix.
  • 4
    Cover and chill for 30 minutes.
