I adapted my grandmother's 3 bean salad to come up with this colorful, flavorful version.

Ingredients For confetti bean salad

1 csugar

3/4 ccider vinegar

1/2 cvegetable oil

3/4 tspsalt

1/4 tsppepper

1 cangreen beans
-
1 canyellow wax beans
-
1 cankidney beans
-
1 canblack beans

1 cangarbanzo beans

1 cangreat northern beans
-
1 lgonion, chopped
-
1 lggreen bell pepper, chopped

1/2 lgred bell pepper, chopped
How To Make confetti bean salad

1Combine sugar, vinegar, oil and salt and pepper in a large bowl. Mix well.

2Drain all beans, rinse in cold water, drain and add to bowl. Add onions and peppers. Mix well. Marinate in refrigerator for 24 hours for best flavor.

3NOTES: You can use any type of canned bean you prefer - cannelini, great northern, pinto, red beans, small white, cranberry, etc.
