This recipe is from Pasta Revolution by America's Test Kitchen. I served this to my three girlfriends for a luncheon and it was a big smash! The chicken on the side with homemade bread sticks made this meal complete. This recipe will serve four adults.

Ingredients For cold soba noodle salad

14 ozdried soba noodles

1 Tbspsalt
-
1/2 tspgrated fresh ginger

1 Tbspvegetable oil
-
1/4 csoy sauce
-
3 Tbspmirin
-
1/2 tspsugar
-
1/4 tspwasabi paste or powder
-
4 lgred radshes, trimmed and shredded
-
2 lggreen onions cut on the bias
-
1 sheetnori, cut into matchstick slices

1/4 c(opt) bonito flakes

4 sm(opt) chicken breast
How To Make cold soba noodle salad

1*Bring 4 quarts water to boil in large pot. *Add noodles and salt and cook, stirring often, until tender. *Drain noodles, rinse with cold water, and drain again, leaving noodles slightly wet. *Transfer to large bowl and toss with oil.

2*Whisk soy sauce, MIRIN, sugar, ginger, and wasabi together in small bowl, then pour over noodles. *Add radishes and green onions *Toss until well combined. *Sprinkle individual portions with nori and bonito flakes, if using.

3NOTE: I sautéed some chicken breast in butter, sliced and put on the plate with the noodles...great luncheon with my friends!
