This healthy salad is a great side dish, ideal for picnics and potlucks!

Ingredients For classic french carrot salad

  • SALAD
  • 1 lb
    carrots, peeled
  • 1/2 c
    sultana raisins
  • 1/3 c
    slivered almonds, toasted
  • 1 lg
    green onion, finely chopped
  • 2 Tbsp
    parsley, finely chopped
  • VINAIGRETTE
  • 2 Tbsp
    grapeseed oil
  • 1 Tbsp
    extra virgin olive oil
  • 1 Tbsp
    freshly squeezed lemon juice
  • 1 Tbsp
    freshly squeezed orange juice
  • 1 heaping Tbsp
    Dijon mustard
  • 1 Tbsp
    honey
  • 1/4 tsp
    hot paprika, or to taste
  • 1/4 tsp
    ground Himalayan pink salt
  • 1/4 tsp
    freshly ground black pepper (I always use mixed peppercorns)

How To Make classic french carrot salad

    To make the salad, shred the carrots using the food processor with the shredding disc.
  • 2
    Transfer the shredded carrots to a large bowl. Add the raisins, slivered almonds and green onion. Toss and set aside.

    To make the vinaigrette, add all ingredients to a measuring cup. Whisk until nicely blended; taste and adjust seasonings if needed.

    Pour the vinaigrette over the salad and toss until nicely coated.

    Sprinkle on parsley before transferring to the fridge for at least 30 minutes before serving.
