1 lbcarrots, peeled

1/2 csultana raisins

1/3 cslivered almonds, toasted

1 lggreen onion, finely chopped

2 Tbspparsley, finely chopped
- VINAIGRETTE
-
2 Tbspgrapeseed oil
-
1 Tbspextra virgin olive oil
-
1 Tbspfreshly squeezed lemon juice
-
1 Tbspfreshly squeezed orange juice
-
1 heaping TbspDijon mustard
-
1 Tbsphoney
-
1/4 tsphot paprika, or to taste
-
1/4 tspground Himalayan pink salt

1/4 tspfreshly ground black pepper (I always use mixed peppercorns)
How To Make classic french carrot salad

1To make the salad, shred the carrots using the food processor with the shredding disc.

2Transfer the shredded carrots to a large bowl. Add the raisins, slivered almonds and green onion. Toss and set aside.

3To make the vinaigrette, add all ingredients to a measuring cup. Whisk until nicely blended; taste and adjust seasonings if needed.

4Pour the vinaigrette over the salad and toss until nicely coated.

5Sprinkle on parsley before transferring to the fridge for at least 30 minutes before serving.
