Who doesn't like egg salad? To me, if given the choice between egg salad and chicken salad, I'll take the egg any day! I'm tweaking this recipe somewhat with the addition of some pickle relish--just because I like it. Recipe & photo from: http://www.incredibleegg.org

Ingredients For classic egg salad

6eggs, hard boiled, sliced

1/4 cmayonnaise

2 tspfresh lemon juice

1 Tbspminced onion

1/4 tspsalt
-
1/4 tsppepper
-
1/4 cchopped celery
-
1/4 csweet pickle relish

lettuce leaves
How To Make classic egg salad

1Reserve 4 center egg slices for garnish, if desired. Chop remaining eggs.

2Mix mayonnaise, lemon juice, onion, salt and pepper in medium bowl. Add the chopped eggs, celery, and pickle relish; mix well.

3Refrigerate, covered, to blend flavors.

4Serve on lettuce leaves; garnish with reserved egg slices.
