Who doesn't like egg salad? To me, if given the choice between egg salad and chicken salad, I'll take the egg any day! I'm tweaking this recipe somewhat with the addition of some pickle relish--just because I like it. Recipe & photo from: http://www.incredibleegg.org

Ingredients For classic egg salad

  • 6
    eggs, hard boiled, sliced
  • 1/4 c
    mayonnaise
  • 2 tsp
    fresh lemon juice
  • 1 Tbsp
    minced onion
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/4 c
    chopped celery
  • 1/4 c
    sweet pickle relish
  • lettuce leaves

How To Make classic egg salad

  • 1
    Reserve 4 center egg slices for garnish, if desired. Chop remaining eggs.

    Mix mayonnaise, lemon juice, onion, salt and pepper in medium bowl. Add the chopped eggs, celery, and pickle relish; mix well.

    Refrigerate, covered, to blend flavors.

    Serve on lettuce leaves; garnish with reserved egg slices.
