I wanted a change of pace from corn on the cob for my BBQ tomorrow so I decided on a salad. No mayo to spoil on a hot day either. Very simple with just a few ingredients. It's refreshing and crisp. Enjoy!

Wow, this summer side dish is light and refreshing. It's filled with fresh summer corn and tomato. Bits of cucumber throughout is refreshing. Since there is no mayonnaise in this salad, it can sit out for a while. Perfect for a summer cookout. The longer it marinates, the better this tastes so it's a great make-ahead recipe.

Ingredients For ciao bella cucumber tomato and corn salad

  • 1 lb
    fresh or frozen corn (thawed)
  • 1 pt
    grape or cherry tomatoes, quartered
  • 1 lg
    cucumber, peeled, cored and chopped
  • 1 tsp
    salt
  • 1/8 tsp
    black pepper
  • 1 tsp
    dried basil
  • 1/4 tsp
    dried oregano
  • 1/4 c
    olive oil
  • 2 Tbsp
    red wine vinegar

  • Chopped cucumbers and cherry tomatoes on a cutting board.

    Quarter cherry tomatoes and cube cucumbers.
  • Salad ingredients added to a bowl.
