Adapted this recipe from one for cooked spinach that was in our local paper years ago. The dressing is easily doubled. Water chestnuts are a bit bland. To give them a flavor boost, I marinate them in a little of the dressing for 15 - 20 minutes.

Ingredients For chinese spinach salad

fresh spinach leaves

mushrooms, sliced thin

onion, sliced thin

tomato, diced

toasted slivered almonds

1/2 cwater chestnuts, sliced (i like them slivered)
- DRESSING

4 Tbspvegetable oil

1-2 tspsugar
-
4 Tbspsoy sauce or tamari

4 Tbsponion, small diced
How To Make chinese spinach salad

1Place ingredients for the dressing in a microwave safe, one cup measure. Heat in the microwave 20 - 30 seconds; just until warm. Whisk together.

2Place water chestnuts in a small bowl. Drizzle on enough dressing to coat. Let stand 15 - 20 minutes

3Divide spinach, mushrooms, onion slices, and tomato between 2 salad plates. Add water chestnuts. Whisk dressing, drizzle over salad and garnish with toasted slivered almonds.
