Made a double Recipe to feed a Group Gathering! My friends loved it. Summer salad that tasted Fresh and tangy!

Ingredients For chickpea salad w/ cucumber tomatoes and feta

  • 2 can
    chickpeas-rinsed and drained
  • 2 md
    cucumbers sliced - quartered or halved
  • 1 pt
    cherry tomatoes-halved
  • 2 can
    black olives-drained and sliced
  • 1 pt
    mediterranean feta
  • 1/2 sm
    red onion- mini diced
  • DRESSING: LEMON JUICE, MINCED GARLIC,OLIVE OIL, SALT PEPPER
  • 6 Tbsp
    olive oil
  • 6 Tbsp
    lemon juice
  • 3 clove
    garlic-pressed or diced

How To Make chickpea salad w/ cucumber tomatoes and feta

  • 1
    Combined all ingredients in large resealable bowl. Add dressing ingredients in a small glass jar. I use an empty ranch dressing jar and shake and pour and toss until salad is coated nicely. Chill 2 hours before serving.
