chickpea salad (meatless)
Was looking for a healthy sandwich option and came across a vegan recipes similar to this. I took advise from a Forks over Knives article that said to soak dried garbanzo beans. The flavor is more nutty.

8 ozgarbanzo beans, dry

1/2 cred onion diced

1/2 ccelery stalk diced

1/2 ccashew s, chopped fine

4 Tbsphummus

1/2 smlemon squeezed
-
1 Tbspmaple syrup
-
1/2 cdried cranberries
-
1/2 cwalnut halves
- SPICES

2 pinchhimalayan salt, pepper, smoked paprika

1 pinchgarlic powder
-
1/3 cmayo
How To Make chickpea salad (meatless)

1Mix hummus, mayo and cashews. Squeeze lemon

2Mash chick peas and add to cashew mix.

3Chop celery and onion. Add spices. Mix all.

4Serve on seedy bread with lettuce, dill pickles and spicy mustard.
