This is really tasty and a nice way to combine chick peas and rice in one dish. You can serve this over a bed of greens as well.

Ingredients For chick pea and rice salad

  • 2 c
    cook rice
  • 1-15 oz. can
    chick peas
  • 1 sm
    leek, chopped thin, cleaned (disgard green part)
  • 2 clove
    garlic, roasted and minced
  • 1/4-1/2 c
    chopped parsley
  • 1/4-1/2 tsp
    red pepper flakes
  • 2 tsp
    cumin, ground
  • 2 tsp
    coriander
  • 3 Tbsp
    fresh lemon juice
  • 1 Tbsp
    grapeseed oil
  • salt and pepper to taste
  • 2 Tbsp
    toated sesame seeds
  • additional options: chopped cucumber, tomato or tahini sauce.

How To Make chick pea and rice salad

    Mix all the ingredients in a large bowl until evenly combined.

    You can heat this one up, or stick it in the fridge and eatit cold.
