Ingredients For cauliflower salad

2 lbfrozen cauliflower
-
1 pkgfrozen peas and carrots (10 oz.)

1 1/4 creduced calorie mayonnaise

1 tspsugar
-
1 tspsalt
-
1/4 tspblack pepper
-
1/4 tsppaprika
-
1 Tbspapple cider vinegar
-
1 tspmustard
-
1 cdiced celery
-
2/3 cchopped onion
-
4hard boiled eggs
How To Make cauliflower salad

1In a large bowl, microwave cauliflower and peas and carrots according to directions. Drain in colander and then rinse with cold water. Place colander in bowl and cool in the refrigerator for AT LEAST 30 minutes.

2Mix mayo, sugar, salt, pepper, 1/8 tsp. paprika, vinegar and mustard.

3Remove veggies from refrigerator and discard any liquid in the bowl. Pat drained vegetables dry with paper towels and chop any large cauliflower pieces into 3/4 inch chunks.

4Place veggies back into the same bowl and add celery, onion and chopped hard boiled eggs.

5Pour mayo mixture over the salad and stir until all is well coated.

6Sprinkle with remaining paprika and chll well before serving.
