Found this recipe years ago. It is colorful and very good. It goes well with Mexican or Italian food. I like to serve it in a glass bowl.

Ingredients For cauliflower salad

4 csliced cauliflower

1 cripe olives, chopped
-
2/3 cgreen pepper, chopped

1/2 cchopped pimiento, drained

1/2 conion, chopped
- DRESSING

1/2 colive oil or oil of your choice

3 Tbsplemon juice, fresh

3 Tbspwine vinegar of your choice, but i like red

1/2 tspsalt
-
1/2 tspsugar

1/4 tspblack pepper
How To Make cauliflower salad

1Mix vegetables all together in a very large bowl. Set aside.

2Put dressing ingredients in a blender and mix well.

3Pour dressing over vegetables and marinate overnight. Toss before serving.
