Ingredients For carrot slaw with cranberries and walnuts

  • 1 lb
    carrots, peeled and grated
  • 3 Tbsp
    walnut or olive oil
  • 1 tsp
    lemon zest
  • 2 Tbsp
    lemon juice
  • 2 Tbsp
    orange juice, fresh
  • 1-1/2 Tbsp
    honey
  • 1/2 c
    dried cranberries
  • 1/2 c
    walnuts, toasted
  • 3
    green onions,thinly sliced
  • 3 Tbsp
    freshly chopped parsley
  • 1/2 tsp
    salt
  • 1/4 tsp
    freshly ground black pepper

How To Make carrot slaw with cranberries and walnuts

  • 1
    Toss all ingredients in a large bowl. Cover and refrigerate for at least 15 minutes. Serve cold.
