brown rice and edamame salad

Green onions, spring onions and scallions are all the same thing in my mind. Whatever you call them, they add a nice touch to this Asian style salad. Add time to the recipe if your edamame and rice is not pre-cooked!

Ingredients For brown rice and edamame salad

  • 1 c
    edamame, shelled, cooked and cooled
  • 3 c
    brown rice, cooked and cooled
  • 3
    red radishes, sliced
  • 2
    green onions, sliced
  • 1/4 c
    cilantro, minced, plus a few sprigs for garnish
  • DRESSING
  • 1/4 c
    rice vinegar
  • 1 Tbsp
    soy sauce
  • 1 Tbsp
    olive oil
  • 1 tsp
    sesame oil, optional
  • salt and pepper, to taste

How To Make brown rice and edamame salad

  • 1
    Toss edamame, rice, radish, onions and cilantro in a bowl.
  • 2
    Whisk together dressing ingredients and gently fold into salad.
  • 3
    Add a few sprigs cilantro to garnish.
