Green onions, spring onions and scallions are all the same thing in my mind. Whatever you call them, they add a nice touch to this Asian style salad. Add time to the recipe if your edamame and rice is not pre-cooked!

Ingredients For brown rice and edamame salad

1 cedamame, shelled, cooked and cooled

3 cbrown rice, cooked and cooled

3red radishes, sliced

2green onions, sliced
-
1/4 ccilantro, minced, plus a few sprigs for garnish
- DRESSING
-
1/4 crice vinegar
-
1 Tbspsoy sauce
-
1 Tbspolive oil
-
1 tspsesame oil, optional
-
salt and pepper, to taste
How To Make brown rice and edamame salad

1Toss edamame, rice, radish, onions and cilantro in a bowl.

2Whisk together dressing ingredients and gently fold into salad.

3Add a few sprigs cilantro to garnish.
