We have a delicious Asian/American buffet here in Redding, California. It is called the Grand Buffet. A great blend of favorite dishes from all over the world with an emphasis on seafood. We were so sorry to see it closed during the pandemic, and so glad to see it had finally reopened recently. It is always packed with people. We enjoy their huge Koi pond inside the entrance. One of my favorite dishes is the crab salad. I decided that I would try my hand at recreating their fabulous dish. Mr. Wonderful says I nailed it. I think I did, too. Enjoy!

Ingredients For bonnie's fabulous crab salad

  • 1 lb
    imitation crabmeat (see step 1)
  • 1/4 c
    finely sliced red onion strips
  • 1/2 c
    minced celery (i prefer the hearts)
  • 3/4 c
    best foods mayonnaise
  • 1 md
    lemon, juiced and seeds removed
  • 1 tsp
    dried dill
  • 1 tsp
    pure honey
  • salt and pepper, to taste

How To Make bonnie's fabulous crab salad

    This is the 2 pound bag I buy at my local store. It can be frozen. The brand name is Aquamar. It is flake style. You can use fresh crab if you have it on hand.

    Cut the imitation crab into thin slices, then cut them into narrow strips about 2 inches long. Place the strips in a medium mixing bowl in the fridge to keep cold while you prep the rest of the ingredients.

    Add the red onion strips and minced celery.
  • 4
    Add the mayonnaise, more or less to suit your taste, lemon juice, dill, honey, salt and pepper, to taste.

    Gently mix everything together. Cover the bowl with plastic wrap and refrigerate. This salad may be eaten immediately or chilled a few hours. It's delicious as a light supper with crackers and your favorite wine, or paired with Asian food.

    Here is a serving. I love a bowl of this crab salad with Miltons Crackers from Costco. So delicious! Enjoy!
