Ingredients For bok choy salad with coconut honey lime dressing

3baby bok choy, chopped

1 Tbspolive oil
-
1/2fresno chili, seeded and minced
-
garlic
-
6scallions, chopped and white and green parts separated
-
crushed peanuts, for garnish
- DRESSING
-
2 Tbspfish sauce
-
2 Tbspfresh lime juice
-
2 Tbsphoney
-
1 ccoconut cream
How To Make bok choy salad with coconut honey lime dressing

1Boil a pot of water and add some salt. Once boiling, add the bok choy. Stir twice then drain. Set aside.

2In a wok, add the oil and stir fry the chilies for 2 minutes. Transfer with a slotted spoon to a plate. Add the garlic and stir fry about 1 minute. Transfer to the plate with the chilies. Add the white parts of the scallions and stir fry 2 minutes.

3Add the green parts of the scallions and stir fry 1 more minute. Add to the bok choy and stir.

4Mix the ingredients together for the dressing and pour over the bok choy salad.

5Mix well and garnish with nuts.
