black eyed pea salad
I make this with leftover rice that has been cooked in broth. Its important to use broth cooked rice for the best flavor. Black eyed peas have some of the largest protein content in the legume family, but this is great with the addition of a smoked poultry protein; I like slices of smoked turkey. The creamy beans with the crisp veggies and the hearty rice makes a filling meal in a bowl and is incredibly addictive!
