black bean, white corn, avocado guacamole

I had something similar to this in a restaurant so decided to try to make something like it at home. It is so refreshing and really makes a different guacamole. Of course you can add or subtract ingredients as you want to make it your own. Enjoy!

Ingredients For black bean, white corn, avocado guacamole

  • 1/2 c
    black beans-rinsed and drained
  • 1/2 c
    white corn
  • 1
    avocado-diced
  • 1 Tbsp
    jalapeno-seeded and finely minced
  • 1/4 c
    green pepper-diced
  • 1/4 c
    chopped cilantro
  • 1 clove
    garlic-finely minced
  • 1 Tbsp
    vegetable oil
  • 1
    lime-juiced
  • salt and pepper to taste

How To Make black bean, white corn, avocado guacamole

    Mix all ingredients in a bowl

    Serve with chips. We like to use the Tostitos Scoops. It would also make a nice side salad.
