I made this up one time when it was to hot to cook. I especially like making & eating this in hot summer time although we eat it year round.This is a very healthy dish that keeps well in fridge.

Ingredients For black bean salad

  • 1 can
    black beans, rinced & drained
  • 1 can
    garden peas drained
  • 1 can
    whole yellow corn, drained
  • 1 sm
    red onion, diced
  • 1/4 c
    lime juice
  • 1 can
    red kidney beans rinsed& drained
  • 1 can
    (small can)sliced mushrooms large pieces cut in half

How To Make black bean salad

  • 1
    Drain all liquid out of beans, peas & corn, mix everything together & put in refrigerator a while so flavors can blend.Thisis a good make ahead dish, will last for several days in fridge. Sometimes I add diced tomatoes.
