This makes a delicious and refreshing Summer salad---great for a picnic supper on the patio. Corn bread made with mild green chilies and a pitcher of Margaritas make excellent accompanyments.

1 lblean ground beef

1 pkgtaco seasoning mix

1/3 cwater

1 bunchromaine lettuce head, chopped

4 mdgreen onions, sliced

1 mdred onion, chopped

15 1/2 ozblack beans, drained & rinsed

1 lgtomato, chopped
-
1 mdavocado, peeled, pitted & cubed

1 ccheddar cheese, shredded
-
1/2 cblack olives, sliced

1/2 ccatalina dressing
-
1 1/2 cfritos corn chips
How To Make best taco salad

1Brown ground beef and add taco seasoning mix and 1/3 cup water. Simmer 10 minutes until thickened. Set aside. In a large salad bowl, combine lettuce, red onion, green onion, black beans, tomato, avocado, black olives and cheese. Mix in ground beef/taco mixture. Just before serving, add the corn chips and enough Catalina dressing to moisten. Toss well and serve immediately.
